This weekend just gone has been a tough one for many people in Australia. COVID infection rates are on the rise again, there’s been new lockdowns announced and restrictions affecting day-to-day living are back. The situation is evolving rapidly and perhaps that, combined with the fact that it’s been chilly, wet and dark for a few days has got me craving comfort food.
Comfort food is highly personal. For some it might be sweet,but for me it’s savoury and specifically in the form of a potato. Yes, the humble spud whether it be mashed, roasted, in the form of a hot chip or a crunchy crisp, makes my heart sing.
In recent years the jacket potato has triumphantly made its way to near top of my potato products line-up. For years I was of the understanding a jacket potato was any potato in its skin, generally boiled, and then often cut open and served with sour cream, bacon and spring onions. I’ve had a long love affair with crumpets. To me, they’re the perfect snack – just enough to curb your hunger without spoiling your next main meal, and you can eat them with both sweet and savoury toppings (honey + butter and grilled cheese are my two recommendations).
Adam and I have consumed quite a few packets of supermarket crumpets over the last month, so when a recipe for homemade crumpets popped up in one of my social media feeds the other day, I took it as a sign that we needed to try making them ourselves…
I find there are some dishes Adam and I make over and over again for dinner, and bolognese sauce with pasta features quite near the top of that list. After a long day, nothing quite beats coming home to a comforting bowl of al dente pasta smothered in a rich, tomato dense bolognese. It’s never the most Instagram-worthy meal, but it’s darn tasty and sometimes that’s all you need right?!
I spent years tinkering with my mum’s recipe and testing out others in Italian cookbooks (this was a favourite for a long time) but then Adam came into my life, and with it his bolognese recipe. It tastes decadent, but normally we’ve always got all the ingredients on hand. Adam normally makes a double batch which ensures we’ve got plenty of leftovers. It freezes exceptionally well and tastes just a great dolloped on a steaming jacket potato or on a bit of toasted sourdough as it does pasta.
